• 1 tbsp soft butter
• 1/2 cup mayonnaise
• 2 tbsp finely chopped dill leaves
• 1/2 lemon, juiced
• 1/2 teaspoon sea salt
• Pinch freshly ground black pepper
• 2 stalks celery, leaves picked and stems finely sliced
• 1 small green apple, finely sliced
• 1/2 small fennel, finely sliced
• 1 teaspoon flaky sea salt
