Pork, Apple & Fennel Pies - Riverview Farms

Ingredients

• 1 x Riverview Farms Pork Roast with crackle (meat only), cut into 1.5cm pieces
• 2 x tbs unsalted butter
• 1 x onion, finely chopped
• 1 x fennel, trimmed & diced
• 2 x sprigs thyme, finely chopped
• 2 x cloves garlic, finely chopped
• 1 x tbs plain flour
• 1 x ½ cups chicken stock
• 2 x medium potatoes, peeled & diced
• 2 x apples, cored & diced
• 4 x sheets frozen short crust pastry
• 1 x egg, beaten
