Ingredients

• 1 1/2 cups all-purpose flour
• 3/4 cup whole wheat pastry flour
• 1 1/2 cups lukewarm water
• 1/2 tsp Red Star Active Dry Yeast
• Sponge (see above)
• 3/4 cup very warm water (120-130°F)
• 1 cup whole wheat pastry flour
• 2 teaspoons salt
• 1 teaspoon Red Star Active Dry Yeast
• 2 to 3 cups all-purpose flour
