  • 2 cloves garlic, roughly chopped
  • 1/4 cup (60 ml) apple cider vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • Salt and freshly ground black pepper to taste
  • 3 pounds (1.36 kg) beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped (approx. 200g / 7oz)
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour (approx. 16g / 0.6 oz)
  • 1 (14.5 ounce / 411g) can diced tomatoes, undrained
  • 1 teaspoon sugar
  • 2 cups (475 ml) beef broth
  • 1 bay leaf
