• 2 1/2 cups self-rising cornmeal
• 5 eggs, beaten
• 1/2 cup mayonnaise
• 1 1/2 sticks butter, softened
• 3/4 cup buttermilk
• 1 small red or Vidalia onion, chopped
• 2 cups cottage cheese
• 2 tablespoons sugar
• 1 10-ounce package frozen chopped spinach, thawed and drained on a paper towel
