Ingredients

• 1 tablespoon olive oil
• ¼ cup small onion diced
• 1 jalapeno seeded and minced (just a green bell pepper works too)
• 2 cloves garlic minced
• 2 cups vegetable or chicken broth
• 1 teaspoon paprika
• 1 teaspoon kosher salt
• 2 cups long-grain rice
• 1/2 teaspoon cumin
• 1/4 teaspoon oregano
• 1 teaspoon chili powder
• 2/3 cup tomato sauce
• 1 tablespoon butter (optional (no it isn’t))
