• 2 leeks, white and 3 inches of green, diced
• 5 tablespoons extra virgin olive oil
• 4 green onions, finely chopped
• 1/2 cup fresh white bread crumbs
• 3/4 cup dry red wine
• 1 tablespoon cumin seeds
• 1 teaspoon coriander seeds
• 3 allspice berries, or 1/4 teaspoon ground allspice (optional)
• 1 1/4 pounds ground lamb
• 4 cloves garlic, minced
• 1 1/2 tablespoons grated orange zest
• 3 tablespoons chopped fresh flat-leaf parsley
• 1/2 teaspoon chopped fresh thyme
• 1 teaspoon salt
• 1 teaspoon freshly ground black pepper
• 1/4 cup all-purpose flour
• One 28-ounce can chopped Italian plum tomatoes
• 1/2 teaspoon sugar
• 1/3 cup pitted and coarsely chopped kalamata olives
