Baked Zucchini and Mushroom Boats

Ingredients

• 2 (7 oz or 200 g) zucchini
• 1/2 teaspoon (2.5 g) salt
• 1 tablespoon (0.5 fl oz or 15 ml) olive oil
• 1 pound (450 g) mushrooms
• 4 ounces (120 g) cottage cheese
• 4 ounces (120 g) plain yogurt
• 6 sun-dried tomatoes in oil
• 2 tablespoons (30 g) light mayonnaise
• 1 teaspoon (2 g) onion powder
• 1 teaspoon (2 g) paprika powder
• 1/2 cup (2 oz or 60 g) shredded cheese
