Ingredients

• 1 tablespoon butter
• 1 cup roasted corn (~2 ears)
• 3 large avocados, mashed
• 1/2 cup cotija crumbled
• Package of thick cut sliced bacon, cooked, drained, chopped
• 2 tablespoons lime juice (~1 lime)
• 1 jalapeno pepper, finely diced
• 1/4 cup red onion, finely diced
• 1 tablespoon minced garlic
• 1 tablespoon cilantro
• Salt and pepper to taste
