In a large nonstick skillet (fry pan) saute onion and garlic in butter until tender. Stir in flour until blended.
Ingredients
- 1/4 cup diced onion
- 1 clove garlic (minced)
- 1 Tablespoon butter (margarine can be used, but butter is best)
- 1 Tblespoon all-purpose flour
- 1 1/4 cups fat-free half-and-half (full fat can be used if desired)
- 4 ounces fat-free cream cheese (cubed, full fat can be used if desired)
- 3/4 teaspoon salt (adjust as desired)
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground black pepper
- 1/2 cup bacon pieces (fried and drained - adjust amount as desired)
- 1/4 cup Parmesan cheese (grated or shredded - block is best - coat grater with cooking oil first and the cheese will not stick)
- 1 pkg. 16 oz. thawed and squeezed dry (a potato ricer works well for this, or press firmly in a drainer or colander)
- 1 Tablespoon shredded Parmesan cheese (This is for topping garnish)
