Ingredients

• 4 cups hot orzo RiceSelect® Orzo
• 4 chicken breast, skinned, deboned and cut in bite-sized pieces
• 2 teaspoons fresh lime juice
• 2 teaspoons cornstarch
• ½ teaspoon chili powder
• ½ teaspoon ground cumin
• ⅛ teaspoon pepper
• 2 tablespoons olive oil
• 1 medium onion, chopped
• 1 medium yellow pepper, cut in thin strips
• 1 lime, peeled, cut in very thin slices and finely slivered
• 1 head Romaine lettuce, torn in bite-size pieces
• Chopped cilantro, for garnish
