Scalloped Sweet Potatoes - Lisa G Cooks

Ingredients

• 2 Cups milk ((I used 2%))
• 2 tbsp whole wheat flour
• 1 tsp dijon mustard
• 1/2 tsp salt
• 1/4 tsp pepper
• 5-6 Sprigs fresh thyme
• 3 Cloves garlic (garlic)
• 2 Large sweet potatoes ( skin on, cleaned and sliced thinly (1/8 inch))
• 1/2 Cup extra old cheddar (, grated)
• 2 tbsp grated Parmesan cheese
