• 2 tablespoons Olive Oil
• 1 large onion finely diced
• 2 stalks celery chopped
• 3 cloves garlic minced
• 2 teaspoons Italian herbs
• 2 can butter beans – rinsed and drained
• 2 - 3 cups Vegetable stock
• 2 teaspoons paprika
• 1 teaspoon chilli flakes
• 3 - 4 cups Vegetable stock
• Juice of ½ lemon
• Salt and pepper
• Chopped parsley
