Ingredients

• 1 cup diced onions
• ½ cup diced celery

• 4 cups low-sodium chicken broth
• 1 cup water
• 2 lb. gold potatoes (such as Yukon or Klondike), peeled and diced (6–8 cups)
• 1 pkg. Garlic and Fine Herbs Boursin cheese, crumbled (5.3 oz.)
