Birthday Cake Pie | Redpath Sugar

Ingredients

• ½ recipe Redpath Perfect Pie Crust 101
• 1 cup (112 g) cake and pastry flour
• ¾ cup (94 g) all-purpose flour
• 1 ½ tsp (8g) baking powder
• ½ tsp (3 g) salt
• ½ cup (113 g) unsalted butter, softened
• 1 ¼ cups (250 g) Redpath® Granulated Sugar
• 1 large egg
• 2 large egg yolks
• 4 tsp (20 ml) pure vanilla extract
• ¾ cup (180 ml) whole milk
• ½ cup (88 g) coloured sprinkles
• 4 large egg whites (½ cup pasteurized egg whites)
• ¾ cup (170 g) unsalted butter, cut into 1 in (2.5 cm) pieces and softened
• ½ tsp (2.5 ml) pure vanilla extract
• ⅔ cup (113 g) chopped dark chocolate, melted and cooled
• sprinkles and whipped cream to decorate (optional)
