Roasted Tomato Basil Soup

Ingredients

• 3lbs Roma tomatoes
• 1 onion, quartered
• 1 clove garlic
• 2-3 tbsp Sizzle
• 2 tsp Italian seasoning
• 1 ½ cups vegetable broth
• 2 tbsp tomato paste
• 1 tsp balsamic vinegar
• Few fresh Gotham Greens basil leaves + more to garnish
• 1/2 cup canned coconut milk (or heavy cream)
• Salt and pepper, to taste
