Rustic Potato Stew (Romanian Style) - Yummy Expert

Ingredients

• 1 onion, finely chopped
• 2 green onions, chopped (with the greens)
• 1 carrot, grated
• 1 red bell pepper, finely chopped
• Potatoes (amount depending on preference), peeled and cubed
• 3 tbsp olive oil
• Water (enough to cover the potatoes)
• 1 sprig fresh thyme
• 1 sprig rosemary
• 1 bay leaf
• Salt, to taste
• 2 tbsp flour
• Additional water (for flour slurry)
• 1 tbsp tomato paste (or tomato purée)
• Instead of flour: 1 grated raw potato (to naturally thicken the stew)
