Sweet Potato Shakshuka | TASTE

Ingredients

• 2 lb plus 2oz sweet potatoes, skin on and scrubbed clean
• 1 sm red onion, thinly sliced into rounds
• 2 tbsp lemon juice
• 3 tbsp olive oil
• 1 ⅓ c coarsely grated mature cheddar
• 3 garlic cloves, minced
• 1 tsp cumin seeds, roughly crushed with a mortar and pestle
• 8 lg eggs
• 2 tbsp unsalted butter
• 2 ¼ tsp sriracha
• 2 tbsp cilantro leaves, with some stem attached
• salt and black pepper
