Ingredients: 5 pounds potatoes; 4 stalks celery (finely diced (or chopped if you prefer)); ½ sweet onion (finely diced* see note); 2½ cups mayonnaise (I only use Duke’s®!!!); 8 ounces soft cream cheese; ½ cup sour cream; 1 or 2 jars sweet/hot pickled peppers (I like it with about 1½ jars – to taste); 3 – 4 hard-boiled eggs (chopped); salt and pepper; prepared yellow mustard (if desired* see note (I prefer to keep it on the side))
