French Onion Soup - Eco marketplace

Ingredients

• 15g butter
• 30ml olive oil
• 4 large or 6 - 8 medium onions sliced
• 4 cloves garlic, 1 whole the rest finely chopped
• 1 tsp brown sugar
• ½ tsp dried thyme
• 2 tbsp plain flour
• 120ml white wine
• 1.5 litres of beef stock – can use veg stock as an alternative if serving vegetarians
• 4 thick slices of French bread or 4 x ¼ of a Ciabatta toasted
• 350g grated Gruyere or Emmental cheese
