Ingredients

  • 1 ¼ cups all-purpose flour
  • 1 tablespoon sugar
  • ½ teaspoon table salt
  • 8 tablespoons 1 stick unsalted butter, cut into ½-inch cubes and frozen
  • 2 tablespoons ice water
  • 1 tablespoon unsalted butter
  • 1 ½ teaspoons minced garlic
  • 16 ounces fresh baby spinach
  • 1 ¾ teaspoons kosher salt (divided)
  • 1 cup heavy cream
  • ½ cup half-and-half
  • 3 large eggs
  • 2 tablespoons minced chives
  • ¼ cup finely grated Parmigiano Reggiano cheese
  • Ground black pepper (to taste)
  • ⅛ teaspoon ground nutmeg
  • Pinch cayenne pepper
  • 2 ounces bacon (diced and cooked until crisp)
  • 2 ounces fresh chèvre (crumbled)
