• 8 oz elbow macaroni
• 2 cups sharp cheddar cheese, grated (reserve 1/2 cup for topping)
• 1 cup evaporated milk
• 2 large eggs
• 1/2 cup onion, finely diced
• 2 tbsp unsalted butter
• 1 tbsp yellow mustard
• 1 tbsp ketchup
• 1 tsp Worcestershire sauce
• 1/2 tsp hot pepper sauce (Bajan pepper sauce or Scotch bonnet sauce)
• 1/2 tsp paprika
• 1/2 tsp ground black pepper
• 1/2 tsp salt
• 1/4 tsp ground nutmeg
• 1/4 cup panko breadcrumbs
• 1 tbsp fresh thyme leaves, chopped
• 1/4 cup scallions, thinly sliced
