Ingredients

• 2 1/2 lb. Zucchini
• 1 Red bell pepper
• 1/2 Yellow onion
• 3 tbsp. Olive oil
• to taste Salt and Pepper
• 3/4 cup Heavy cream
• 2 large Eggs
• 8 oz. Cheddar cheese
• 3 cloves Garlic
• 1/2 cup grated Parmesan cheese
• 1/3 cup Parsley
• 1 1/2 cups Breadcrumbs
• 1/2 stick Butter
