Ingredients

• 1/3 cup coconut oil
• 1/2 cup semi-sweet chocolate chips
• 2 tablespoons unsweetened cocoa powder
• 1/2 cup granulated sugar
• 1 egg
• 1 egg yolk
• 1 teaspoon vanilla
• 1 cup grated zucchini (excess moisture squeezed out)
• 1 cup spelt flour (or 1/2 cup whole-wheat, 1/2 cup white)
• 1/4 teaspoon baking soda
• 1/2 teaspoon salt
• Frosting
• 4 -6 oz semi-sweet chocolate chips
• 2 tablespoons coconut oil (or butter)
