Ingredients

• 2 cups (500ml) cider vinegar
• 1 cup (250ml) sugar
• 4 tsp (20ml) salt
• 1⁄2 bag (8 cups, 1kg) Arctic Gardens Corn Supersweet
• 2 cups (500ml) finely diced red bell pepper
• 2 jalapeno peppers, seeded and finely diced
• 1 cup (250ml) finely diced red onion
• 2 tbsp (30ml) mustard seeds
• 2 tsp (10ml) celery seed
• 1 tsp (5ml) coriander seeds
• 1 tsp (5ml) turmeric powder
• 1⁄2 cup (125ml) water
• 1⁄4 cup (60ml) cornstarch
