• 6-8 pieces thick-cut bacon
• ½ yellow onion, small diced
• 2-3 garlic cloves, minced
• Blackstone Tuscan Herb Seasoning
• 2 cups baby spinach
• 4-6 eggs
• 3 tablespoons heavy cream
• 1 tomato, small diced
• 1/3 cup shredded white cheddar
• 1 tablespoon chopped chives
• 1 green bell pepper, cut into 1 ½ inch rings
• 1 red bell pepper, cut into 1 ½ inch rings
• Sour cream for garnish
