• 3 5" green onions, very finely chopped
• 1/4 cup fresh coriander, finely minced
• 2 tablespoons prepared salsa
• 1 teaspoon Cajun seasoning
• 1 teaspoon table salt
• 1/2 teaspoon freshly ground black pepper
• 1 pound ground chuck
• 1 tablespoon vegetable oil to grease grill
• 1 cup red onion, about 1/4 inch dice
• 2 tablespoons chopped fresh coriander
• 1 teaspoon lime rind, freshly grated
• 2 tablespoons lime juice, freshly squeezed
• 1/2 teaspoon dried oregano
• 1/4 teaspoon salt
• 1/4 teaspoon freshly ground black pepper
