- Bone-in skin-on ham, approx. 3.5-4 kg in weight
- 100g brown sugar
- 100g honey
- 80ml soy sauce
- 1 heaped tbsp cornflour (mixed in equal quantity of cold water)
- 2 tbsp glace cherries
- Zest of 1 orange
- 1 tbsp fresh thyme leaves
- 1/2 a whole nutmeg, grated
