Nonno’s Cacciatore - edible Southeastern Massachusetts

Ingredients

• 4 to 6 tbsp olive oil, divided
• 2 onions, thickly sliced
• 4 to 5 green bell peppers, seeds removed and cut into strips
• 2 red bell peppers, seeds removed and cut into strips
• 3 cloves garlic, minced, or to taste
• dash of cream sherry or dry white wine
• fresh or dried oregano, basil, parsley, and rosemary, to taste
• salt and pepper, to taste
• 1 28-ounce can ground peeled tomatoes
• 1 28-ounce can tomato sauce
• 6 sweet Italian sausages and/or
• 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
• ¼ cup all-purpose flour
• pinch rubbed sage, optional
