Tomato Tarte Tatin | Pampas

Ingredients

• 1 tbsp olive oil
• 2 red onions, halved and finely sliced
• 2 cloves garlic, crushed
• 1 tbsp CSR sugar
• 2 tbsp balsamic vinegar
• Salt and cracker pepper
• ½ tsp dried oregano
• 2 tspn chopped fresh rosemary
• 400g canned cherry tomatoes
• 1½ sheets Pampas Frozen Puff Pastry, just thawed
• Goats cheese & baby rocket to serve
