- 40 cloves garlic - unpeeled
- 1 large, organic chicken - cut into pieces
- ½ cup white wine - (125ml) or Verjuice or apple juice or chicken stock
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh thyme - or 1 tsp dried thyme
- 2 tbsp fresh sage - chopped finely, or 1/2 tsp dried sage
- 2 tbsp fresh parsley - chopped finely
- 4 small bay leaves
- 1 tsp herb salt and freshly ground pepper
