Tomato Orval Ketchup – Chef's Table by Home Brew Chef

Ingredients

• 2 tablespoon oil, olive
• 2 cup onions, walla walla or Maui, (peeled and chopped)
• 1/4 cup sugar, organic
• 1 teaspoon mustard seed, brown, whole
• 1/2 teaspoon celery seed, ground
• 1 tablespoon salt, kosher
• 2 teaspoon peppercorns, black, ground fresh
• 2 each garlic, cloves (peeled and minced)
• 2 tablespoon vinegar, malt
• 12 ounce Orval (such as Orval )
• 4 cup tomato puree (such as San Marzano Puree Tomatoes)
• 1 tablespoon miso, red ((optional))
