Ingredients

• 4 whole cloves
• 1 bay leaf
• 1 cinnamon stick
• 1/4 teaspoon celery seeds
• 1/4 teaspoon chile flakes
• 2 pounds Roma or Plum tomatoes, stem removed and roughly chopped
• 1 1/2 teaspoons salt
• 1/2 cup apple cider vinegar
• 5 tablespoons light brown sugar
• 1 yellow onion, peeled and chopped
• 1 garlic clove, diced
