Pickled courgettes - Recipe from South Tyrol

Ingredients

• 1 kg courgettes
• 500 g onion
• 250 g sugar
• 250 ml vinegar
• 1 red bell pepper (finely diced)
• 1 tsp pepper
• 1 tsp curry powder
• 1 tsp paprika
• 1 Pinch salt
• 250 ml water
• 2 cloves of garlic
