Cornbread, leek and bacon stuffing - Caroline Barty

Ingredients

• 440g Cheese and chilli cornbread, cut into 1cm cubes
• 40g butter
• 1 tablespoon vegetable oil
• 2 sticks celery, finely chopped
• 3 leeks, washed, trimmed and finely chopped
• 3 garlic cloves, peeled and crushed
• 240g smoked streaky bacon, finely chopped
• 80g fresh white breadcrumbs
• 2 tablespoons finely chopped flat-leaf parsley
• 2 tablespoons finely chopped sage
• 200ml cold chicken stock (cube is fine)
• 2 large eggs, beaten
