• 1 pound ground lamb
• 1/2 cup fresh bread crumbs
• 1 large egg, beaten
• 1 teaspoon ground cumin
• 1/2 teaspoon garam masala
• 1/2 teaspoon kosher salt
• green curry sauce:
• 1 tablespoon vegetable oil
• 1 medium yellow onion, chopped
• 4 cloves garlic, minced
• 2 tablespoons peeled and minced fresh ginger
• 1 jalapeno or serrano chile, seeded and minced
• 1 (13 1/2-ounce) can coconut milk (do not shake)
• 1 cup packed chopped cilantro leaves
• 1 teaspoon tamarind concentrate (sold at Indian grocers) or fresh lemon juice
