Ingredients

  • 1 pound ground beef
  • 1 tablespoon oil, or for carnivore use butter, bacon grease or even tallow
  • 1 cup beef broth
  • 4 ounces cream cheese, cubed
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese, plus extra for serving
  • 1 tablespoon worcestershire or soy
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 4 pieces bacon, cooked, crispy & crumbled for serving
  • Heat oil or whatever you're using in a large pot, add the beef and cook until fully browned - remove excess grease
  • Pour in the bone broth, bring to a simmer and add cream cheese - stir until melted and fully incorporated
  • Add in the heavy cream, shredded cheddar, Worstershire or soy and garlic powder
  • Cook on low and stir gently until the cheese is melted and soup is thickened - season to taste with salt & pepper
  • Simmer 5–10 minutes until velvety and thick
  • Ladle into bowls and top with extra cheese, crumbled bacon
