Mom's Roasted Garlic Mashed Potatoes – Blue Sky Inspired

Ingredients

• 2 entire heads of roasted garlic (to roast slice off top 1/3 and drizzle with olive oil. Wrap in tin foil and roast at 400 for 35-45 minutes)
• 1 tbsp sea salt
• 5 lbs russet or yukon potatoes, peel and boiled
• 1 cup sour cream
• 1/2 cup butter
• 5 oz cream cheese (or to taste)
• Additional salt & pepper to taste
