Pasta with Sausage and Peppers recipe - from the Debs Kitchen Family Cookbook

Ingredients

• 2 lbs sweet Italian sausage
• 3 T olive oil
• 1 c chopped yellow onions
• 3 sweet red peppers, stemmed, ribs and seeds removed, cut into med. julienne.
• 1 c dry red wine
• 1 can (2 lbs, 3 oz.) Italian plum tomatoes, including liquid
• 1 c water
• 1 T dried oregano
• 1 T dried thyme
• salt and fresh ground black pepper to taste
• dried red pepper flakes
• 1 t fennel seeds
• 1/2 c chopped Italian parsley
• 6 (or more) garlic cloves, peeled and finely chopped
• ziti or rigatoni (enough sauce for 2 lbs.)
• fresh ricotta for serving
