Ingredients

  • 3 ½ cups unbleached all-purpose flour
  • 2 teaspoons salt
  • 1 ¼ warm water (about 110 degrees)
  • 1 teaspoon yeast
  • 1 tablespoon sugar
  • 1 tablespoon oil (grape seed, light olive oil)
  • ½ cup za’atar spice blend*
  • ½ cup olive oil
  • *Za'atar spice blend
  • ¼ cup ground sumac (sumac has a sour/tart taste, if unavailable, substitute lemon zest and ground pepper - or purchase pre-made za'atar spice blend)
  • 3 tablespoons dried thyme
  • 3 tablespoons dried oregano
  • 2 tablespoons sesame seeds
  • 1 teaspoon coarse salt
