Lemon Loaf | Heinen's Grocery Store

Ingredients

• 3 large eggs
• 1 cup granulated sugar
• 1 cup (8 ounces) sour cream or Greek yogurt
• 1/2 cup canola or vegetable oil
• 2 tablespoons lemon zest
• 1 to 2 tablespoons lemon extract, or to taste. (I use 2)
• 1 1/2 cups all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt, or to taste
• Optional: Raspberries (or fruit of your choice)
• 3 cups confectioners’ sugar
• 1/4 cup lemon juice, or as necessary for consistency.
• Optional: 2 teaspoons of heavy cream. See note in Method.
