Ingredients

• 50 g 1 2/3 lb. Bison, inside round
• 40 ml 4 tbsp. Vegetable oil
• 200 ml ¾ cup Red wine
• 15 ml 1 tbsp. Peppercorns, fresh ground
• 4 Juniper berries
• 5 ml 1 tsp. Thyme
• 5 ml 1 tsp. Oregano
• 5 ml 1 tsp. Sweet basil
• 1 med Onion, rough cut
• 30 ml 2 tbsp. Butter
• 25 ml 1/8 cup Flour
• 50 ml ¼ cup Cream
• 8 Mushrooms
• 12 Pearl onions
• 2 Carrots, large dice
• 1 Turnip, large dice
• 15 ml 1 tbsp. Liquid honey
• Salt & Pepper to taste
