• 12 oz (350 g) small courgettes
• juice 1 small lemon
• 1 large very red, ripe tomato, skinned and chopped

• 1 heaped teaspoon coriander seeds
• 1 level tablespoon chopped fresh coriander leaves and a few extra sprigs for serving
