- 2 tsp extra virgin olive oil - plus extra for drizzling
- ½ tsp cumin seeds
- 1 tsp ground coriander
- ½ tsp turmeric
- ½ tsp cayenne pepper
- 1 tsp pepper
- 1 tbsp balsamic vinegar
- 2 small red onions
- 3 cardamon pods
- 2 garlic cloves
- ½ red chilli
- 1kg cherry tomatoes
- Salt & pepper to taste
- 15g fresh basil
- 4 slices of sourdough bread
