Ingredients

• 2 1/2 - 3 pounds chicken (cut up or 1 whole chicken, spatchcocked (see instructions below))
• 1/4 cup lime juice
• 1/4 cup lemon juice
• 1/3 cup dry white wine ( or orange juice)
• 1 clove garlic (minced)
• 1 teaspoon salt
• 1/8 teaspoon pepper
• 1/4 teaspoon thyme
• 3 tablespoons butter
