Ingredients

• For the Salad:
• 4 cups Earthbound Farm Organic Baby Arugula
• 1 cup Earthbound Farm Organic Snap Peas, trimmed and halved
• 1 medium zucchini
• 6-8 radishes, thinly sliced
• 1/2 cup crumbled feta cheese
• 1/4 cup chopped fresh mint leaves (optional, for garnish)
• Salt and pepper to taste
• For the Lemon Vinaigrette:
• 1/4 cup extra-virgin olive oil
• 2 tablespoons fresh lemon juice
• 1 teaspoon lemon zest
• 1 clove garlic, minced
• 1 teaspoon Dijon mustard
• Salt and freshly ground black pepper to taste
