• 2 lbs potatoes, quartered (1 to 2 inches in diameter)
• 3 tablespoons table salt
• 8 -10 slices smoked bacon
• 1 large red onion, chopped fine
• 2 finger sized pickles, diced (I use garlic ones)
• 3 -4 hard-boiled eggs, diced
• 1/2 a carrot, finely diced
• 1 teaspoon sugar
• 1/2 cup white vinegar
• 3 tablespoons whole-grain German mustard
• 1 teaspoon ground black pepper
• 1/4 cup chopped fresh parsley
• 1/4 teaspoon rosemary
• 1/4 teaspoon thyme
• additional salt
