Potato Mushroom Soup

Ingredients

• 2 medium potatoes (about 1 lb), peeled and diced
• 8 oz (225g) fresh mushrooms, sliced
• 4 cups vegetable or chicken broth
• 1 medium carrot, sliced
• 1 parsley root or parsnip, peeled and cut into strips
• 1/2 medium onion, sliced into half rings
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• 1 teaspoon fresh thyme leaves
• Salt
• freshly ground black pepper
• Fresh parsley for garnish
• Sour cream for serving (optional)
