Ingredients

• 1 1/2 cups all-purpose flour
• 1/2 cup sugar
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 eggs
• 1/2 cup maple syrup (or corn syrup)
• 1/2 cup orange juice
• 1/4 cup corn oil (or canola)
• 1 tablespoon orange rind (grated)
• 1 cup cranberries (fresh or frozen, chopped)
• 1/2 cup walnuts ( or pecans, coarsely chopped, optional)
