• 1 pound 93/7 ground beef
• 1 egg
• 1 medium yellow onion, finely chopped
• 2 garlic cloves, minced
• 1 T extra virgin olive oil
• 2 T parsley, finely chopped
• 2 T cilantro, finely chopped
• 2 T tomato paste
• 1/4 cup Harissa paste
• 2 T honey
• 2 T lemon juice
• 2 T extra virgin olive oil
• As needed ground pepper and kosher salt
• As needed 6-inch bamboo skewer
